Beef Suet
Beef suet is the raw, hard fat found around the loins and kidneys. Beef suet vs tallow contains a higher level of triglyceride. The result is that suet has a higher melting point and solidifying point than tallow. Suet is used in many recipes, such as puddings, pastry, and sweet mincemeat.
