Moroccan Lamb Meatballs in Tomato Sauce

Moroccan lamb meatballs simmered in tomato sauce

INGREDIENTS

  • 1 lb ground lamb
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 2 tbsp chopped fresh parsley
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced (for sauce)
  • 1 can crushed tomatoes
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Fresh cilantro or parsley, for garnish

DIRECTIONS

In a bowl, combine the ground lamb, breadcrumbs, egg, garlic, cumin, paprika, cinnamon, parsley, salt, and pepper. Mix gently and form into 1.5-inch meatballs.

Heat olive oil in a large skillet over medium-high heat and brown the meatballs on all sides, about 6-8 minutes total. Remove and set aside.

In the same skillet, add the onion and cook until softened. Add the garlic and cook 30 seconds, then stir in the smoked paprika and cumin.

Pour in the crushed tomatoes, bring to a simmer, and return the meatballs to the skillet. Cover and simmer for 20-25 minutes, until the meatballs are cooked through and the sauce has thickened.

Garnish with fresh herbs and serve with warm bread or over rice.
