INGREDIENTS
- 2 lbs Black Angus ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 2 cans diced tomatoes
- 2 cans kidney or black beans, drained
- 2 cups beef broth
- Salt and pepper, to taste
- Shredded cheese, sour cream, and green onion, for topping
DIRECTIONS
In a large pot, brown the ground beef over medium-high heat, breaking it up as it cooks. Drain excess fat if needed.
Add the onion and garlic and cook until softened, about 3 minutes. Stir in the chili powder, cumin, and paprika, and cook for 1 minute until fragrant.
Add the diced tomatoes, beans, and broth. Bring to a simmer, then reduce heat and cook uncovered for 45 minutes to 1 hour, stirring occasionally, until thickened.
Season to taste with salt and pepper. Serve topped with cheese, sour cream, and green onion.
