Though most ground meat comes from the shoulder, if you’d like to enjoy a fall off the bone piece of lean, delicious meat, the whole Lamb shoulder is the best option.
Slow cooked lamb shoulders are great because these marbled cuts of meat that have a perfect combination of meat and bone. Because the shoulder muscles do more work, it is necessary to cook them for a long period of time, preferably slow roasted or braised.
