Lamb Sweetbreads
People sometimes consider sweetbread to be like the brains, but they are a bit different. Sweetbreads are thymus and pancreas glands and are considered edible offals. They are known for their mild flavor and very creamy texture. They can be cooked in a variety of ways: grilled, braised, or pan-fried. The outside crisps up very easily, yet the inside stay soft and creamy.
