Black Angus Ranch Steak
Taken from the shoulder muscle of the cow, these steaks are formally known as "boneless chuck shoulder center cut steak". The more commonly used name to this unique cut, is the "Ranch Steak." These steaks are characterized by their lean profile, having been meticulously trimmed off nearly all fat. Typically, they are not thicker than an inch and weigh less than 16 ounces.
This inexpensive cut is the perfect alternative to other lean steaks. Known for their robust and beefy flavor, ranch steaks are a flavorful steak for any occasion. The connective tissue of this working shoulder muscle may causes it to be a less tender steak but similar to a flat iron steak, it can be delicious as long as it is cooked properly.
