People sometimes consider sweetbread brains, but they are not brain. Sweetbreads are thymus and pancreas glands, and are considered edible offals. They are known for their mild flavor and very creamy texture. They can be cooked in a variety of ways: grilled, braised, or pan fried. The outside crisps up very easily, yet the inside stay soft and creamy.
